FISH! June 2015 Cooking Class
The first recipe we learned in the FISH! June 2015 cooking class was a delicious grilled salmon with a homemade teriyaki glaze. The salmon was perfectly cooked and the glaze added just the right amount of sweetness. We also learned a great technique for grilling fish so that it doesn't stick to the grill. Simply rub the grill grates with a bit of oil before placing the fish on the grill.
The second recipe we learned was a fish chowder with a creamy base and loaded with chunks of fresh fish and vegetables. The key to this recipe was using a chunky fish like cod or halibut, and not overcooking it. The broth was thick and rich, and the fresh herbs and spices gave it a great depth of flavor. We topped the chowder with crispy croutons and it was absolutely delicious!

The Favorite Fish Recipes With Chef Eric cooking class was an unforgettable experience. Chef Eric is a master in the kitchen and taught us some amazing seafood dishes that were both healthy and delicious. The first recipe we learned was a pan-seared salmon with a lemon butter sauce. The salmon was cooked to perfection and the sauce had just the right amount of tanginess to it. We also learned how to properly season our fish so that it has a crispy exterior and tender interior.
We also learned how to make a spicy shrimp pasta that was bursting with flavor. The key to this recipe was using fresh shrimp and roasting them with lots of garlic and spicy red pepper flakes. The pasta was cooked al dente and the sauce was a simple tomato sauce with fresh basil and oregano. The combination of all the flavors was simply divine.
Chef Eric also taught us how to make a classic seafood paella with saffron rice and loaded with fresh seafood. The rice was perfectly cooked and the seafood was tender and juicy. The saffron added a beautiful yellow color and a slight floral flavor to the dish. This recipe is perfect for entertaining and can feed a crowd.
