  8. Heat the curd to 112°F and hold it at that temperature for 30 minutes, stirring constantly.
  9. Drain the whey and put the cheese in a mold.
  10. Press the cheese for 24 hours.
  11. Take the cheese out of the mold and air dry it for 2-3 days.
  12. Affix some cheese wax to the cheese and let it age for at least 5 months.
